Low Carb Sausage Balls


While I love eggs for breakfast, I am getting a little tired of having them every day. These guys are a great quick breakfast! Grab a few on the way out the door, and you're good to go!

Ingredients
1 lb mild pork sausage
4 oz cream cheese
1 large handful of shredded cheddar
1 c crushed pork rinds (I like hot and spicy)
1 egg

Directions
Preheat oven to 400. Combine all ingredients. Form into slightly-smaller-than-a-golf-ball sized balls. Bake for 20 minutes. 

These will be much greasier than regular sausage balls because there is no flour or bisquick to sop it up. Let the oil absorb into a paper towel before serving. They will also be much softer than the other kind. They pretty much melt in your mouth! And so filling; three of these and I was full. 

I love taking old recipes and transforming them into low carb! Makes sticking to this diet much easier :)

  1. Thank you, I made these tonight. I differed from you as I used spicy sausage and plain pork rinds. I believe next time I will omit the cream cheese and use more cheddar for a firmer ball. Again thanks for the base recipe!

  3. I made these last night and they were wonderful! As I don't have an oven, I pan fried them turning them frequently to crisp on all sides. I used a tablespoon sized meatball which made 36 meatballs. The entire recipe has only 5 grams of carbs which I split into 9 servings of 4 meatballs each for a total of 266 calories with 1 gram of carbs per serving. I used MyFitnessPal for calculation

  4. Yum! These were delicious! I was searching for a recipe without the carbquick or almond flour, two ingredients I can't find in my tiny town, and this one was perfect! Made a big double batch and air fried for 12 mins at 370. My entire family loved then and they fit perfectly into my low carb diet. Thanks for sharing!

  5. I was a little hesitant to try these. So glad I did! They were perfect. I used mild sausage and barbeque pork skins. I dropped mine in mini muffin tons. They are amazing.
