Cornflake Crusted Salmon with Cream Cheese Noodles


For the salmon:
2 salmon fillets (boneless, skinless)
1 cup flour
1 cup crushed cornflakes
1 cup milk
salt and pepper
2 tbs olive oil

Season the fillets on both sides with salt and pepper.
Dip the fillets one at a time into the flour, then the milk, then the cornflakes, making sure to coat them evenly.
Pan fry the fillets in hot olive oil over medium heat until golden brown.

For the noodles (makes 2 servings):
1 pkg ramen noodles without the seasoning packet
1 heaping tbs cream cheese
salt, pepper, paprika, garlic powder, onion powder, and cumin (to taste)

Boil the noodles according to package directions.
Stir in a heaping spoonful of cream cheese.
Season to taste.


This was such a quick and easy meal.  The fish cooks fast, the noodles boil fast.  It's great if you are pressed for time, but still want a good meal.
