Chicken casserole for two


I have an awesome recipe for chicken casserole from the high school FACS teacher (FACS is the new name for Home Ec. It stands for Family and Consumer Sciences). The only problem is that the recipe "serves 12." I don't want to serve 12. I don't even want to serve four! So I thought, "Ok. I'll just divide everything by six, and that will make enough for two." Wrong. So after some experimentation and questioning mathematical principles, I created chicken casserole for two. 

Ingredients
THREE chicken breasts, cooked and shredded (it takes three to get the ratio of chicken to sauce just right)
One can of cream of chicken soup
Four oz sour cream
1/2 of one sleeve of ritz crackers, crushed
1/2 stick of butter, melted

Directions
Combine the chicken, soup, and sour cream and pour into a greased 8x8 casserole dish
Top with crushed ritz crackers and pour the butter over the top
Bake for 30 minutes at 350

This made just enough for my husband and me with no leftovers. Perfect!

  1. This recipe seems simple and tasty! I have a family of five, but the kids barely eat any dinner at all, ever. A recipe for two people is just about perfect for my family, especially if I make a side dish, too.

  5. I had 1/2 of a rotisserie chicken leftover, shredded the meat and used that. Didn't have any cream of chicken soup, I substituted cream of mushroom soup and added some chopped onions. It was great and so easy. Thanks for sharing!

  6. Made this and it was easy and very tasty. I will try the above suggestions to add veggies for a one pot meal (love them!) It would feed 4, though, in my opinion. Great way to use up leftover chicken! It is going on my rotation list.
