Pan fried chicken with Italian herbs and cheese


This meal took 10 minutes start to finish. Perfect for the first day back to work after  Christmas break!

Ingredients
2 boneless, skinless chicken breasts, pounded to 1/2 inch thick and cut in half
Panko bread crumbs
Italian seasoning
Grated Parmesan cheese
Flour
1 egg, beaten
Shredded mozzarella
Olive oil
Salt and pepper

Directions
Drizzle olive oil into a skillet over medium heat
Combine bread crumbs, Parmesan, and Italian seasonings
Salt and pepper the chicken pieces
Dredge in flour, dip in egg, and coat in bread crumb mixture
Pan fry over medium heat for about 5 minutes on each side
After turning the chicken over halfway through cooking, top with shredded mozzarella and let melt

This also makes a great chicken sandwich or biscuit with leftover pieces!
