Ginger-Lime Cookies

This recipe comes from my mom's kitchen.  She is an amazing baker!  These are currently my favorite cookies, and I hope you enjoy them as much as I do.



Ingrediants:
-1 cup Sugar
-1 cup Shortening
-1cup honey
-6 tbs Lime Juice
-Zest of One Lime
-2 eggs
-1 tsp vanilla extract
-1tsp baking soda
-1 tbs ground ginger
-4 cups flour

Combine the sugar, honey, shortening, and lime juice in pot over medium heat.  Let them melt together, then completely cool.

Mix eggs, vanilla extract, baking soda, and ground ginger. Gradually add it to the cooled honey mixture.

Add flour and stir until well-blended.

Spoon out a walnut-sized helping of the dough.  Roll it in sugar mixed with the lime zest.  Bake at 350 for 12 to 15 minutes.
