Mini Egg Rolls





When my husband and I first got together, his mother introduced me to the simplest way to make mini egg rolls.  They are seriously delicious and totally addictive!

You will need:
-2 packages of wonton wrappers
-1 bag of cole slaw mix
-1 lb ground beef or turkey
-salt and pepper
-soy sauce (for dipping)
-small bowl of water (for rolling the egg rolls)
-vegetable oil (for frying)

Directions
-Pour the bag of cole slaw mix into a big pot and cover with water. Sprinkle in salt and pepper.  Bring to a boil until soft.
-While the cole slaw is cooking, brown the meat with salt and pepper.
-Once both have finished cooking, add the meat to the big pot and mix it together.
-Begin rolling the egg rolls:

Step 1: Wet the wrapper by dipping your fingers in the bowl of water and rubbing them all across the wrapper. Spoon a small portion of filling into the center of the wrapper.
Step 2: Begin rolling from the bottom corner to the top corner.
Step 3: Fold the side corners into the middle.
Step 4:  Heat the oil to 375 degrees (I use my deep fryer; Hey, I never said these were healthy!) and fry for about a minute until the egg rolls are golden brown.

-Once they are all fried and have cooled for a moment, theyare ready to enjoy! Try dipping them in soy sauce, duck sauce, CHEESE sauce (trust me on this one!), or anything you prefer. And they make a ton so they're great for a party =)

  1. Cole slaw mix!! Who-da thunk it?? Having a "duh" moment right now. I am saving this because it's perfect for when I make pork chow mein. I always want more sides than just rice.

  4. I love a good egg roll and using cole slaw mix is such a good short cut...don't let the profile pic fool you. I may appear Asian but was adopted and raised by parents of German/Polish heritage.
