Glasses USA


My husband has been wearing the same glasses since high school.  Let that sink in for a moment.

White Chicken Enchiladas with Creamy Sauce


This yummy dinner is made using leftovers from my Salsa Chicken in the Crockpot.  I love it when one meal becomes two!

Ingredients:
Leftover Salsa Chicken (or any cooked shredded chicken)
Soft Flour Tortillas (the BIG ones)
Shredded Cheese
1 can Cream of Chicken Soup (I take out all the canned chicken pieces from the soup)
A "good sprinkling" of Cumin, Paprika, and Onion Powder
Pinch of salt
Toppings: Sour cream, salsa, extra cheese, black olives, etc

~In the center of each tortilla, spoon out the salsa chicken. Top with shredded cheese. Fold the tortilla up into itself like a burrito.
~Place the tortillas into a deep baking dish.
~Spoon out the cream of chicken soup.  Add cumin, paprika, onion powder, and a little salt over the soup. Mix it and spread it over the tortillas. Top with shredded cheese.
~Bake at 350 for 20 minutes.
~Serve with desired toppings.



Salsa Chicken in the Crock Pot

 

Now that school has started back (and high school football!), I am trying to find little things to make our lives a little easier.  Football season is band season, and having a band director for a husband means that we have late rehearsals, games, and Saturday band competitions.  Sometimes it feels like we live at the school, so when we are at home, I want as much quality family time as I can get since it won't just be the two of us for much longer! One time-saver I have is using my crock pot to fix dinner.  I can throw ingredients together in the morning before school and come home to find dinner waiting on us!

This recipe is so simple, yet there are endless serving possibilities.  I put three thawed chicken breasts in the crock, covered them with a 16 oz jar of salsa, and cooked them on low from about 7:00 in the morning until we got home at 4:00.  Then all I had to do was take the chicken out and shred it, but it was so tender it fell apart on its own!

For dinner that night, we served the shredded chicken over tortilla chips with melted queso, sour cream, a little extra salsa, and anything else you want to put in nachos.  I purposely made more than enough chicken so that we could have leftovers, turing one dinner into two, and some lunches!

Chicken Pockets

Ingredients:
Crescent Roll Dough
Fresh Baby Spinach
Mushrooms
Cooked, Shredded Chicken
Cream Cheese
Parmesan Cheese

Start by sautee-ing (I can't figure out how to spell that word; you know what I mean) chopped mushrooms in butter and some minced garlic.

Combine cooked, shredded chicken with enough cream cheese to make it stick together. Add some onion powder, salt, and pepper to taste.

Unroll your crescent dough lay flat. Top with baby spinach leaves and mushrooms.


On top of that, add your chicken/cream cheese mixture.


 Top with another crescent roll and seal the edges.  Bake according to crescent roll package instructions.

Why I was MIA for a while...

So this is my first post in an awfully long time, but I have two very good reasons why I dropped the bloggy ball for a while.

Reason #1

Mr. Husband and I finally bought a house!
We had decided to start looking around mid-June, and after a day of looking (it only took us one day!), we found our dream home.  We put the offer on it that afternoon, and the next morning our realtor called to say the owners had accepted!  We got all of the paper work in order and about four weeks later, we closed on the house.  It was really the smoothest process, and I thank my amazing realtor and mortgage consultant for making everything go like clockwork!  The house is 3 bedroom, 1.5 bathroom, with a huge eat-in kitchen, formal dining room, and spacious living room with a gorgeous stone fireplace.  The backyard is already fenced, so hopefully we'll be able to get a dog soon.  We are thrilled with our new place!

Reason #2

We're having a baby!!!!!!!!!!!!!
We found out on the 4th of July, and have been dying to start telling people!  This picture is how we finally announced it to the world.  I wanted to wait until after the first ultrasound (8 weeks). At the appointment, we got to hear the heartbeat: a very fast, very steady 180 beats per minute.  That amazing sound made my own heart skip a beat.  My mom and my husband were there to hear it also.  My due date is March 9th, which is my grandfather's birthday, and I would love for my son or daughter to share a birthday with him. My super-creative sister-in-law Jessica (find her blog here) is helping me come up with some pretty awesome nursery ideas, so stay tuned to see how they turn out!

I can't believe how blessed my little *growing* family is.  I am so thankful.
